Step-by-Step Guide to Making Robin Fraser's Master-ish Class Apple Crumble

Crust Ingredients


  • 2 1/2 cups all-purpose flour
  • 1 1/4 teaspoons salt
  • 6 tablespoons butter, cubed
  • 3/4 cup shortening
  • 1/2 cup ice water


Crust Instructions


  • Mix the flour and salt together in a large bowl.
  • Using a pastry cutter or two forks, add the butter and shortening into the mixture a little bit at a time, until it creates pea-sized clumps.
  • Drizzle the cold water in, one tablespoon at a time, and stir with a rubber spatula or wooden spoon after every tablespoon is added. 
  • Transfer the pie dough to a floured work surface. The dough should come together easily and should not feel overly sticky. Using floured hands, form it into a ball. Divide dough in half. Flatten each half into 1-inch thick discs using your hands - these are two pie separate pie crusts.
  • Wrap each tightly in plastic wrap. Refrigerate for at least 2 hours, up to a few days.


Pie Filling Ingredients


  • One of your homemade dough discs
  • 7 large apples - peeled, cut and cored
  • 2 tablespoons lemon juice
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 cup granulated sugar
  • 1/4 brown sugar
  • 1 teaspoon pure vanilla extract


Crumble Topping Ingredients


  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1/3 cup unsalted butter, melted


Pie Instructions


  • In a large bowl using a rubber spatula or wooden spoon, stir the apples, lemon juice, flour, cloves, nutmeg, cinnamon, sugars, and vanilla extract together until thoroughly combined.
  • Preheat oven to 400°F (204°C).
  • On a floured work surface, roll out one of the discs of chilled dough. Carefully place the dough into a 9×2 inch pie dish.
  • Lay the apple pieces into the pie. Use a small paring knife to trim excess dough off the edges. Flute the edges.
  • In a medium bowl, combine the brown sugar and flour. Using a rubber spatula, stir in the butter. The crumble topping will be thick and crumbly. Sprinkle over apples.
  • Place the pie onto a large baking sheet and bake for 20 minutes. Keeping the pie in the oven, turn the temperature down to 375°F (190°C) and bake for an additional 40 minutes.
